These fluffy oat-based pancakes make for the perfect weekend breakfast. I love switching up my normal week-day breakfast (a green smoothie) on the weekends. There’s something to be said about the slower pace of a Saturday or Sunday morning that puts me in the mood to whip up a batch of these yummy pancakes!

Fluffy Banana Oat Blueberry Pancakes

Banana Oat Blueberry Pancakes made in 1 bowl with wholesome ingredients! Easy, fluffy, tender, naturally sweetened, and the perfect healthy breakfast.

Ingredients
  

  • 1 Very Ripe Banana
  • 1 cup Almond Milk
  • 2 cups Rolled Oats
  • 1 Egg
  • 1 ½ tsp Baking Powder
  • 1 tsp Vanilla

Toppings

  • Maple Syrup
  • Blueberries

Instructions
 

  • Place the milk, banana, and oats in a blender and blend until smooth.
  • Add egg, baking powder, and vanilla. Blend until combined.
  • Heat a griddle on medium heat and grease with coconut oil .
  • Pour about ¼ cup of batter onto the griddle, forming the pancakes. If adding optional additions (chocolate chips, berries, etc.) add to pancakes at this time.
  • Cook until large bubbles appear on the surface and the perimeter seems firm (a few minutes).
  • Flip and cook for another minute or two, until both sides are golden brown. Repeat with the rest of the batter.
  • Serve immediately with warm maple syrup.
