Grain-free granola that’s crunchy, flavorful, and low in sugar. Made with nuts like cashews and almonds, pumpkin seeds, dried cherries, and coconut chips. This is delicious in yogurt parfaits, sprinkled on a smoothie bowl or simply eaten straight from the jar!

This has been a highly requested recipe from many of my family and friends since I’ve been bringing this Grain-Free Granola to every brunch, and cabin weekend this summer. And let me just say, it’s a HIT! I’m not sure why I didn’t post this recipe sooner, but better late than never, right?

You can use whatever nuts and seeds you want!

This recipe is super flexible. You can substitute any nuts or seeds your heart desires. I’ve made it with pecans and sunflower seeds before and that was delicious! It’s also fun to play around with the dried fruit. I have to say, dried cherries are my FAVORITE, but I also love adding raisins, dried cranberries, or dried blueberries. Here are some yummy ways to enjoy your granola:

  1. Straight from the jar! It’s that good. You could definitely eat a handful (or two) for a little snack.
  2. Sprinkle on top of your favorite yogurt. I love SoDelicious or Kite Hill dairy-free yogurts.
  3. Sprinkle on top of apple nachos. If you haven’t tried apple nachos, you’re missing out!
  4. Sprinkle on top of your smoothie bowl. This is probably my personal favorite.
  5. Pour in a mason jar, tie with a cute bow, and give it as a gift!

Grain-Free Granola

Ingredients
  

  • 1 cup Raw Almonds
  • 1 cup Raw Cashews
  • cup Raw Pumpkin Seeds
  • ½ cup Unsweetened Coconut Flakes I like Dang brand
  • ¼ cup Coconut Oil melted
  • cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 2 tsp Cinnamon
  • tsp Salt
  • ¾ cup Dried Cherries or your favorite dried fruit

Instructions
 

  • Preheat oven to 275 °F.
  • In a food processor or blender, add almonds and cashews to chop into small pieces. Do not over blend. You can also use a knife and roughly chop the nuts.
  • Combine melted coconut oil, maple syrup, vanilla extract, cinnamon and salt in a bowl. Add almonds, cashews, pumpkin seeds, and coconut flakes and stir together.
  • Spread granola mixture evenly onto a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes or until lightly browned. Remove from oven and add dried cherries or raisins, may need to press into granola mixture.
  • Allow the granola to cool for about 20 minutes or until hardened. Break apart granola. Store in an airtight container or mason jar for up to 2 weeks.

Notes

Add on top of yogurt or simply enjoy by the handful. Leftovers store well in a glass container for a week or so.
