This past weekend, I spent the most beautiful fall afternoon with one of my girlfriends, sitting by the lake in Wayzata, sipping on smoothies from one of our favorite local places called Crisp & Green, and talking about life. It was magical! The air crisp, the sun was shining, and the leaves had started to change color. Fall has officially arrived in MN!

Fall is my FAVORITE. I live for the days when I can throw on a pair of jeans (or yoga pants most days because who I am I kidding) and an oversized chunky sweater with a latte in one hand walking down the street with leaves crunching under my feet. Now, if there is a place where I could do this year-round, let me know because I would pick up and move there stat!

When it comes to fall food, pumpkin is one of my go-to flavors. It’s comforting, warming, grounding, nourishing, and just overall so festive! It’s also extremely versatile. You can make anything from pumpkin chilly to pumpkin desserts! One of my recent creations has been a Pumpkin Pie Protein Smoothie that is like a little slice of fall in your mouth.

Now, you can definitely buy pumpkin pie spice from the store, but it’s just as easy to make it yourself with just a few spices you probably already have on hand!

Pumpkin Spice Blend:

3 TBS Cinnamon

2 tsp ground Ginger

2 tsp ground Nutmeg

1 1/2 tsp ground All-Spice

1/2 tsp ground Cloves

I like to make a batch of this and keep it on hand in my spice cabinet for other pumpkin dishes that I make during the season.

Ingredients
  

  • 1 cup Almond Milk
  • cup Pumpkin Puree
  • 2 tsp Pumpkin Pie Spice
  • 1 scoop Vanilla Plant-Based Protein Powder
  • ½ – 1 cup Frozen Zucchini
  • ¼ Avocado
  • 1 tsp Maca

Instructions
 

  • Add all ingredients to a high-speed blender and blend until smooth and creamy.
