One of my favorite snacks to have on hand in the summer months when we’re always on the go is Superfood Vanilla Bean Protein Bars. They’re super easy to throw together and taste even better than store-bought protein bars…in my opinion 😉 The key ingredient is Orgain Organic Plant Based Protein Powder – Vanilla Bean flavor. The vanilla flavor makes the bars naturally sweet, while not taking away from the added superfoods. I love having these on hand for a picnic!

Most people think that protein powders can only be used in smoothies. I encourage you to start thinking outside the box! You would be amazed at the number of healthy snacks and desserts that can be made with protein powder (like these bars). It’s a great way to sneak a little more protein into your diet. I love using protein powder as a substitute for flour in recipes, like cookies or brownies. 

Now, let’s not forget about the Orgain Organic Plant Based Protein Powder – Creamy Chocolate Fudge flavor. I love using this one as the base for a chocolate smoothie that tastes just like a fudgsicle! You could totally substitute the chocolate fudge flavor for these bars if you really wanted to. Just note that the flavor will change.

I found Orgain Organic Protein Powder at Target near the Pharmacy section. It’s located in the same aisle as other protein powders and bars. I love both the Vanilla Bean and Creamy Chocolate Fudge flavor.

Superfood Vanilla Bean Protein Bars

These Superfood Vanilla Bean Protein Bars are packed with organic protein powder, healthy fats, and superfoods to fuel your active body. Make ahead of time for a quick, on-the-go snack.

Ingredients
  

  • ¼ cup Orgain Organic Plant-Based Powder – Vanilla Bean feel free to use your favorite brand
  • ½ cup Almond Butter can sub any nut butter
  • 2 Tbs Maple Syrup or Coconut Nectar
  • ½ cup Unsweetened Coconut Flakes
  • ½ cup Walnuts or Almonds chopped
  • ¼ cup Goji Berries can sub dried cranberries or cherries
  • ¼ cup Cacao Nibs

Instructions
 

  • Combine almond butter and protein powder in a bowl.
  • Add all remaining ingredients and stir to combine.
  • Press mixture into a parchment paper-lined baking dish and let harden in the fridge for about 1 hour.

Notes

Store bars in an airtight container.
