Just because you’re plant-based, that doesn’t mean you have to give up sandwiches. You can easily create the most delicious, meat-free sandwich that’s loaded full of veggies, healthy fats, and plant-based protein.

If you haven’t tried tempeh yet, don’t let it intimidate you! It’s a great source of plant-based protein and super versatile. You can toss it in a salad, stir fry, and now in this stacked sandwich.

Vegan Tempeh Veggie Avocado Sandwich

This sandwich is stuffed full of crispy tempeh, creamy avocado, veggies, and sauerkraut. Made with toasted sprouted bread spread with a thick layer of hummus and whole grain mustard.

Ingredients
  

  • 2 slices of Whole Grain Sprouted Bread
  • 1 Tbs Hummus
  • 1 Tbs Whole Grain Mustard
  • ½ Avocado mashed
  • ½ Bell Pepper thinly sliced
  • ¼ Cucumber thinly sliced
  • 5 slices of Tempeh
  • 2 Tbs Sauerkraut

Instructions
 

  • Prepare the tempeh by slicing it into 1/4 inch strips and sauteeing it in a little coconut oil on low heat until golden brown on both sides.
  • Toast the bread while you prep the other ingredients.
  • Slice the pepper and cucumber into thin strips.
  • Once the bread is toasted, spread on a generous layer of hummus and whole-grain mustard.
  • Mash half an avocado – spreading it evenly on each slice of bread.
  • Start assembling the sandwich by adding the tempeh, vegetables, and sauerkraut on top of the avocado, hummu, and mustard.
  • Slice in half and enjoy!

    This looks delicious! I love sauerkraut, but I’m all out, so I think I may substitute pickles instead. I like how it pairs with hummus. Thank you for sharing! I can’t wait to try!
