  • Peanut butter – I prefer drippy/runny natural peanut butter but you can use any nut or seed butter you like. Costco has the best natural peanut butter, but I also love Georgia Grinders!
  • Rolled oats – My favorite brand for organic rolled oats is One Degree

1. Make the Butterfinger mixture by combining peanut butter, rolled oats, mulberries, chia seeds, almond flour, and protein powder.

2. Cut a slit in the dates and remove the pit.

3. Fill each date with a spoonful of the Butterfinger mixture. This makes enough for about 12 – 20 dates, depending on how large your dates are.

4. Melt the coconut oil, then add the cacao powder and maple syrup to make the chocolate drizzle. Whisk until smooth.

5. The final step is to drizzle the dates with the melted chocolate. Pop the dates on parchment and place them in the freezer until the chocolate sets, about 10 minutes.

Ingredients
  

  • 12 Medjool Dates pitted

Butterfinger Filling

  • ½ cup creamy peanut butter
  • cup dried mulberries
  • ¼ cup rolled oats
  • 1 Tbs chia seeds
  • 1 Tbs vanilla protein powder
  • 1 Tbs almond flour

Chocolate Drizzle

  • 1 Tbs coconut oil melted
  • 1 Tbs cacao powder
  • 1 Tbs maple syrup or date syrup

Instructions
 

  • Cut a slit in each date and remove the pit.
  • Fill each date with a spoonful of the butterfinger filling. Set aside.
  • Place the coconut oil in a microwave safe bowl and melt in the microwave. It shouldn't take longer than 1 minute.
  • Add the cacao powder and maple syrup to the coconut oil and whisk until smooth and combined.
  • Place the filled dates on a baking sheet lined with parchment. Drizzle the chocolate over the dates.
  • Place in the freezer to set for about 10 minutes.
