Almond butter oatmeal chocolate chip cookies made with less than 10 ingredients and one bowl. These cookies are healthy, gluten-free, made without butter or oil, and are perfectly sweet and chewy.
Cookies are one of my favorite treats to quick whip up when I’m craving something sweet! These Chewy Oatmeal Chocolate Chip Almond Butter Cookies will soon become one of your favorites as well because they are not only SUPER chewy and chocolatey, but SUPER simple to make.
One unexpected ingredient in these cookies is ground flax meal. Flax seeds are high in omega-3’s, fiber, protein, and other important vitamins and nutrients. Just two tablespoons of flax seeds a day can help improve the health of your skin and hair.
The ALA fats in flax seeds benefit the skin and hair by providing essential fats as well as b-vitamins, which can help reduce dryness.
Health Tip: Try sprinkling one tablespoon of ground flax meal on your salads! You won’t even taste it.
The type of sweetener you use will affect the color of the cookies. I used pure maple syrup when I baked these, so the color is slightly lighter than using coconut nectar. Coconut nectar will give you a browner looking cookie.

Chewy Oatmeal Chocolate Chip Almond Butter Cookies
Ingredients
- 1 cup +2 Tbs Gluten-Free Oats
- 1 cup Almond Butter
- ½ cup Maple Syrup or Coconut Nectar
- 2 tsp Vanilla Extract
- 2 Tbs Ground Flax Seeds
- 2 tsp Baking Powder
- ¼ tsp Salt
- ½ cup Dairy-Free Dark Chocolate Chips
Optional Add-ins:
- Walnuts or Dried Cranberries
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- Stir almond butter very well so there is no oil separation on top.
- Mix almond butter, vanilla extract and maple syrup/coconut nectar in a large mixing bowl. One by one, add oats, ground flaxseed, baking powder, and sea salt to the wet mixture. Stir together until a thick cookie dough is formed.
- Fold in dark chocolate chips, chopped walnuts and dried cranberries (optional).
- Using a cookie or ice cream scoop, measure out dough balls and place on cookie sheet. Press a few extra chocolate chips on top.
- Bake in the oven for 8-10 minutes until the cookies start to turn golden brown around the edges.
- Leave to cool on the cookie sheet for 5-7 minutes before removing them from the pan. Enjoy!
well. The more oil, the greasier your cookie. The more oil, the more your cookies will spread while baking. So stir, stir, stir and make sure it s super thick! You can even refrigerate before using.
