Chia seeds are a wonder food. The list of their health benefits is endless! “Chia” is actually the ancient Mayan word for “strength.” These little black seeds have recently surfaced as a modern-day superfood with their impressive list of nutrients.
Here are some of their benefits:

- High fiber content
- Chia seeds can absorb up to 10-12 times their weight in water, becoming gel-like and expanding in your stomach (maximum health benefits are released when seeds turn into a gel)

- Beneficial for those with Type 2 Diabetes as chia seeds significantly lower blood pressure

Chocolate Chia Seed Pudding
Ingredients
- 1 cup Almond Milk
- ¼ cup Chia Seeds
- 1 Tbs Cacao Powder
- 1 Tbs Maple Syrup or Honey
Toppings
- Dark Chocolate Chips, Fresh Berries, Cacao Nibs
Instructions
- Mix milk, chia seeds, cocoa powder, and sweetener of choice in a bowl.
- Set aside in the fridge for at least one hour. You can even make this the day before and store it in an air tight container.
- Once pudding has set, use a whisk to mix together thoroughly.
- Top with dairy-free chocolate chips, fresh berries, shredded coconut, or whatever your heart desires!
