These fluffy oat-based pancakes make for the perfect weekend breakfast. I love switching up my normal week-day breakfast (a green smoothie) on the weekends. There’s something to be said about the slower pace of a Saturday or Sunday morning that puts me in the mood to whip up a batch of these yummy pancakes!

Fluffy Banana Oat Blueberry Pancakes
Ingredients
- 1 Very Ripe Banana
- 1 cup Almond Milk
- 2 cups Rolled Oats
- 1 Egg
- 1 ½ tsp Baking Powder
- 1 tsp Vanilla
Toppings
- Maple Syrup
- Blueberries
Instructions
- Place the milk, banana, and oats in a blender and blend until smooth.
- Add egg, baking powder, and vanilla. Blend until combined.
- Heat a griddle on medium heat and grease with coconut oil .
- Pour about ¼ cup of batter onto the griddle, forming the pancakes. If adding optional additions (chocolate chips, berries, etc.) add to pancakes at this time.
- Cook until large bubbles appear on the surface and the perimeter seems firm (a few minutes).
- Flip and cook for another minute or two, until both sides are golden brown. Repeat with the rest of the batter.
- Serve immediately with warm maple syrup.
