It’s not summer without a pasta salad, right? This Gluten-Free Greek Pasta Salad is packed with cherry tomatoes, cucumbers, peppers, kalamata olives, and fresh parsley. The lemony garlic dressing is also delicious!
Pasta salads make for great summer party dishes. They pack well and don’t get soggy easily like a green salad can.

Gluten-Free Greek Pasta Salad
A gluten free, healthy greek pasta salad with a simple tangy lemon dressing. Packed with protein and fiber. Great for Summer parties!
Ingredients
Salad
- 1 lb Gluten-Free Rotini Pasta or any shape of your choice
- ½ Red Onion chopped
- 1 Bell Pepper finely diced
- 1 pint Cherry Tomatoes halved
- ½ cup Pitted Kalamata Olives
- 1 Cucumber quartered and sliced
- ¼ cup Parsley roughly chopped
- Salt & Pepper to taste
Dressing
- ⅓ cup Freshly Squeezed Lemon Juice about 2-3 lemons
- 3 Garlic Cloves
- 2 tbs Parsley finely chopped
- ½ cup Olive Oil
- ½ tsp Salt
- ½ tsp Pepper
Instructions
- Bring a large pot of water to a boil. Add the pasta and cook pasta until al dente. Set aside.
- Chop up vegetables and add to a large bowl.
- Make the dressing by adding all ingredients into a small glass bowl. Whisk together thoroughly.
- In a large bowl, mix together the cooled pasta, red onion, peppers, tomatoes, olives, cucumber, and parsley. Toss gently with 1/4 cup of the dressing and mix. Add more dressing as needed. You may not use all of the dressing, but it stores well in the fridge.
