I just can’t get enough of these Pumpkin Chocolate Chip Cookies! Do you want to know how many times I’ve run back to the store to pick up more pumpkin pie puree?! Let’s just say that I’m on a first-name basis at my local grocery store now. But hey, look on the bright side – these cookies are SUPER healthy, so no shame in baking several batches of these! Not to mention, they melt in your mouth and taste exactly like a slice of pumpkin pie. SIGN ME UP!

Healthy Pumpkin Chocolate Chip Cookies
Ingredients
- 1 ¼ Oat Flour
- ¼ cup Pumpkin Puree not pumpkin pie filling
- ½ cup Almond Butter
- ½ cup Maple Syrup
- 4 tsp Pumpkin Pie Spice
- ½ tsp Baking Soda
- ¼ tsp Salt
- ½ cup Dairy-Free Dark Chocolate Chips I like Lily's or Enjoy Life brand
Instructions
- Preheat oven to 350F .
- Make a flax egg by letting the flax and water to sit for 10 min.
- Add protein powder, almond butter, pumpkin puree, and maple syrup or honey to a mixing bowl.
- Add the flax egg, then stir in chocolate chips.
- Scoop into 1.5 – 2 in balls and gently press down onto a cookie sheet.
- Bake for 10-12 min.
