This simple, sweet chia seed pudding is a great breakfast or morning snack that is full of protein and fiber to give you energy for hours. Made with chia seeds, almond milk, and sweetened with dates.
Chia seeds are considered one of the best superfoods out there. These tiny seeds contain an abundance of nutrients and are so simple to add to a variety of dishes. One of my favorite ways to use them is making chia seed pudding with fresh berries! And you won’t believe how simple it is to make.
But before we get to the recipe, let’s chat more about the health benefits of chia seeds. Did you know that Chia means “strength” in the Mayan language, and chia seeds were known as “runners’ food” because runners and warriors would use them as fuel while running long distances or during battle? Pretty cool, huh?
Besides the energy they provide, chia seeds are also great for healthy skin, anti-aging, great digestion, strong bones, and a metabolism boost.
1. Healthy skin – Chia seeds are one of the highest antioxidant-rich foods on the planet. Antioxidants help the skin repair itself from free radical damage and prevent further damage.
2. Great digestion – Fiber is your best friend when it comes to good digestion. Fiber is essential for balancing your body’s blood sugar levels and keeping you feeling satisfied. The rich fiber content in chia seeds also helps people feel full quicker because it absorbs a considerable amount of water and immediately expands in the stomach when eaten.
3. Strong Bones – Calcium is essential for bone strength and mass. Just one ounce of chia seeds has about 18% of the daily recommended amount of calcium.
4. Metabolism Boost – Studies show that adding chia seeds to your diet reduces a “belly fat” tissue that affects the metabolism of the body. Simply add one serving of chia seeds a day to boost your metabolism and reduce belly fat.
Chia seed pudding is great to throw together the night before you plan on eating it. It’s one of those recipes that gets better the longer you let it sit! Feel free to top with any fresh fruit of your choice – I love berries for the extra fiber.

Mixed Berry Chia Seed Pudding
Ingredients
- 2 cups Dairy-Free Milk almond, coconut, or hemp
- ½ cup Chia Seeds
- 2 Medjool Dates pitted
- 1 cup Mixed Berries
Instructions
- Blend milk, chia seeds, and dates in a blender until dates are fully blended.
- Pour into two mason jars or a large container.
- Store in the refrigerator overnight or for at least 2 hours.
- Top with additional fresh berries and coconut shavings.
- Serve chilled.
