Ah, the holidays. A time to be surrounded by family and friends, enjoy tasty homemade food and revisit long-standing traditions. Thanksgiving and Christmas are my two favorite holidays. I love the coziness of the weather and the traditional dishes that have been in my family for generations. My family is truly blessed with many talented cooks. We take our holiday menus very seriously, so the menu planning always starts early! Thanksgiving, in particular, is my all time favorite – I could live off of roasted squash, sweet potatoes, vegetables, and pumpkin desserts! Who else is with me?
This recipe is SO simple, yet so delicious, warm and comforting. I like to toss a few sprigs of fresh thyme on top before serving to give it a little extra color.
Roasted Cinnamon Butternut Squash
Ingredients
- 4 cups Butternut Squash chopped
- 1-2 Tbs Coconut or Avocado Oil
- ½ tsp Cinnamon
- Salt to taste
Instructions
- Preheat oven to 400F .
- Peel and cut the butternut squash into 1-inch size pieces (if not using pre-cut squash) .
- Line a baking sheet with parchment paper and spread squash evenly on baking sheet .
- Sprinkle with cinnamon, salt, and coconut/avocado oil .
- Bake for 40-45 min or until squash is soft golden brown
- Optional: Garnish with fresh thyme for a little pop of color!
