I love having a little sweet treat after dinner to satisfy my sweet tooth, but I don’t love the idea of having a sugary dessert that is going to wreak havoc on my body. The solution?! Single Serve Chocolate Chip Protein Cookies! I think I may be onto something here…it’s even safe to eat raw! 

What type of protein powder is best to use?

I am a huge proponent of vegan protein powders. Lately, I have been loving Sun Warrior Vanilla. It’s completely plant-based and tastes amazing! I find that to be the trickiest part – finding a protein powder with a clean ingredient label, yet still tastes great. I’m thinking of putting together a protein powder taste test review. Would that be helpful?

Single Serve Chocolate Chip Cookie (Vegan)

A healthy recipe for single-serve chocolate chip cookies that are low in sugar! It’s ready in just 5 minutes, made with only 4 ingredients & contains 22g of protein!

Ingredients
  

  • 3 Tbs Almond Flour
  • 1 Tbs Vanilla Plant-Based Protein Powder
  • 1 Tbs Almond Butter can sub any nut butter
  • 1 Tbs Maple Syrup
  • 1 Tbs Applesauce or Coconut Oil
  • 1 Tbs Ground Flax optional
  • ½ tsp Baking Soda
  • ½ tsp Vanilla Extract
  • 3 Tbs Chocolate Chips dairy-free

Instructions
 

  • Preheat oven to 350F and line a baking sheet with a small sheet of parchment (you will only need enough room for 2 cookies)
  • Add 1 TBS of ground flax seeds and 2 TBS water to a small bowl. This will create a flax egg
  • Add almond butter, maple syrup and apple sauce or cocont oil, and vanilla to a small mixing bowl. Mix together.
  • Add vanilla protein powder, almond flour and salt. Stir together until a dough forms.
  • Form dough into one giant cookie. Flatten down slightly since the cookie won't spread.
  • Bake for 9-12 minutes or until golden brown. They should be super soft and chewy!

    How much salt us supposed to be in this recipe? The instructions say to add salt, but the recipe doesn’t list it or tell how much.
