I don’t know about you, but this warmer Spring weather that we’ve been having (FINALLY) recently has me craving giant raw salads with all the fresh veggies. I love the transition of seasons from Winter to Spring. It’s such a beautiful time in nature where things start to come back to life again, which in turn makes US feel more alive and energetic! This Spring Salad is sure to boost your energy levels.

You could truly add any other veggies that your taste buds are craving! This avocado dressing is super versatile. I even used the leftovers as a dip for veggies the next day. I like to make a couple dressing in bulk at the beginning of the week to keep on hand for quick lunch and dinner salads.

Spring Salad with Creamy Avocado Dressing

A simple, spring salad recipe that is sure to keep your taste buds happy! This salad is loaded with fresh cucumbers, cherry tomatoes, purple cabbage, hemp seeds, and is complete with a tangy avocado dressing. The perfect healthy salad for meal prep, an easy weeknight dinner, or a summer picnic!

Ingredients
  

Salad

  • 5-6 cups Mixed Greens
  • ½ cup Cherry Tomatoes
  • ¾ cup Purple Cabbage pre-shredded or finely chopped
  • ½ cup Shredded Carrots
  • ½ large Cucumber
  • 2 Tbs Hemp Seeds

Dressing

  • 1 Ripe Avocado
  • ½ cup Pine Nuts
  • 2 Garlic Cloves
  • 1 Lime juiced
  • ¼ cup Water
  • ¼ cup Olive Oil
  • 1 tsp Salt

Instructions
 

  • Add mixed greens to a large mixing bowl .
  • Slice cherry tomatoes and cucumbers and add to the mixed greens.
  • Add remainder of veggies to greens and sprinkle with hemp seeds .
  • Add all dressing ingredients to a blender and blend until smooth .
  • Drizzle salad with desired amount of dressing and toss until well combined.

Notes

If you’re only going to eat half of the salad, divide greens and veggies into two bowls before adding dressing. This will keep the salad crisp.
